The Best Roasted Cauliflower with Homemade Tahini

Having a few amazing dressings and sauces in my back pocket always helps to make dinner on a work night easy and yummy. This is literally the simplest recipe ever so just roast away and enjoy!

For the roasted cauliflower:

  • 1 head of cauliflower, cut into florets

  • 2 tablespoons of olive oil

  • sea salt to taste

  • red chili flakes to taste

For the tahini dressing:

  • ¼ cup tahini

  • ¼ cup water

  • 2 cloves garlic, grated

  • juice of ½ lemon

  • 1 tablespoon apple cider vinegar

  • 2 small shallots, minced

  • ¼ teaspoon kosher salt


  • Chopped parsley and cilantro

  • 1 teaspoon of black sesame seeds

  • sea salt

  • red chili flakes

Set the oven to 350 degrees. Once warm, add the cauliflower, olive oil, salt and red chili flakes to a pan and bake for 40 minutes. Flip occasionally.

In a bowl, slowly whisk the tahini to break up any lumps. Add in water and continue to whisk. Once the tahini consistency is even, add in remaining ingredients and stir thoroughly. Add garnish to the dressing, dip and enjoy!!
