Grain Free Hot Cereal Nourishing Bowl

The last few months I have been obsessed with my grin free hot cereal recipe I found on PaleoGlutenFree.com. It's filling, healthy, Whole30 approved and nourishing. I also love to eat this bowl after I do a long run or intense workout!! Recently I have been playing around with toppings to become more creative. On this bowl I used farm fresh blueberries, pepitas, cocnut flakes, bee pollen, hemp seeds, cacao nibs and organic peanut butter (which is my weakness!!). I get a lot of my toppings from Trader Joe's or Whole Foods 365, which I have found are affordable alternatives. 

Enjoy!

  • 1 cup full fat coconut milk
  • 1/3 cup almond meal (you can use your leftover meal from homemade almond milk)
  • 3 tablespoon ground flax seeds 
  • 1 tablespoon chia seeds 
  • 1 teaspoon cinnamon 
  • 1 teaspoon cardamom 
  • 1 pinch of Hawaiian salt 
  • Farm fresh blueberries
  • 1 teaspoon bee pollen
  • 1 teaspoon hemp seeds
  • 1 tablespoon peanut butter (you can swop this out for a non-legume butter)
  • 1 teaspoon cacao nubs
  • 1 tablespoon pepitas
  • 1 teaspoon coconut flakes  

Heat the cup of coconut milk in a pot on low. As the coconut milk is heating add in the almond meal, flax seed meal, chia seeds, cinnamon, cardamom and salt and stir. Once mixture thickens remove from pot and place in a bowl. Top with fresh blueberries, pepitas, cocnut flakes, bee pollen, hemp seeds, cacao nibs and organic peanut butter and serve!
