Recently, I have made a pact with myself that I would not order food. I used to feel overwhelmed by looking in my fridge only to find only a few ingredients and not knowing what to make. Within the last few weeks, I have challenged myself to create something out of nothing. I know I was using the 'I only have a few ingredients' thing to get out of cooking because I was tired or didn't want to deal. Now, I look at this as a creative challenge. I realized that I actually have A LOT of food and ingredients and if I look hard enough, challenge myself and try to be a little creative, I can make something delicious.
This bowl is packed with antioxidants, healthy fats, cleansing veggies, protein, the list can go on. Plus this is an entirely vegan bowl!
- 1/4 cup quinoa
- 1 small persian cucumber, sliced using a mandolin
- 1 cup farm fresh golden tomatoes, halved
- 2 cups cabbage, sliced using a mandolin
- 1/2 head of farm fresh lettuce, sliced
- 2 cups shiitake mushrooms, sliced
- Green Goddess Dressing
- 1 table spoon lemon zest
- Juice from 1/2 lemon
- 1 teaspoon turmeric
- Salt, pepper and cayenne to taste
- Olive oil
Heat 1 cup of water and bring to a boil. Mix in quinoa with a splash of olive oil, turmeric, pinch of cayenne, salt, pepper Mix cabbage, lettuce, lemon zest, juice and one tablespoon of olive oil in, with salt and pepper to taste in a bowl. Set aside. Heat a drizzle of oil in a pan and add shiitake mushrooms, stir until golden. Once quinoa is complete, plate the cabbage and lettuce into a bowl and add remaining ingredients atop. Sprinkle lightly with salt, pepper and sesame seeds. Enjoy!
