Roasted Za'atar Cashews & Almonds

Created from my favorite vegetarian Mediterranean cookbook purchased at Blue Hill Stone Barns, this recipe will give you an extra jolt of energy during the day! 

  • 1 cup almonds
  • 1 cup cashews 
  • 1 tbsp olive oil 
  • 1 tbsp za'atar seasoning 

Set oven to 350 degrees. Mix all ingredients in a bowl until the nuts are coated in the oil and seasoning. Spread evenly on a pan and roast for 15 - 20 minutes, carefully stir every 5 minutes. Let cool and enjoy with a Pellegrino and lime.
