Warming Cardamom Coconut Milk Oatmeal

I have been under the weather for about two weeks now and am sick of it (no pun intended)! This morning, after a light elliptical workout, I made this warming oatmeal and a dark roast Italian coffee to give me some energy for the day. A lot of the below ingredients I get from Thrive Market, which I order from about once a month to restock on essentials.

For the oats:

  • 1/2 cup rolled oats

  • 1 cup full fat coconut milk

  • 1 teaspoon cardamom

  • 1 teaspoon cinnamon

  • splash of vanilla extract

  • handful of crushed raspberries

  • 1 scoop cashew butter (or nut butter of your choice)

  • 1 teaspoon cacao nibs

  • 1 teaspoon hemp hearts

For the latte:

  • 1 cup espresso

  • 1/2 cup macadamia nut milk

  • 1 teaspoon Sun Potion ashwagandha

  • 1 small scoop organic honey (I am using a very special one from Hawaii!)

  • a pinch or two of cinnamon

In a pot, mix the coconut milk and oats together and bring to a light boil. Add in cardamom, cinnamon and vanilla extract. Let thicken for about 5 minutes. As oats are cooking, mix all latte ingredients in a blender. Top the oatmeal with raspberries, cashew butter, hemp hearts and cacao nibs and enjoy! This full and healthy fat meal will sustain you throughout the day.
