Easy Quinoa Lemon and Pine Nut Bowl


This is one of my favorite dishes to make year ‘round because it’s very easy and filling. You can use it as a side, or make a large portion to bring for your weekly lunches (stay frugal!).

1 cup of quinoa

1 teaspoon olive oil

2 table spoons lemon zest

juice of one lemon

1/4 cup of pine nuts, toasted

two cups, shredded kale

black and white sesame seeds and a touch more lemon zest as garnish

salt and pepper to taste

Place quinoa in a pot with two cups of water and the olive oil. While the grain is cooking, shred kale. Once quinoa is cooked and fluffy, transfer to a larger bowl. Add in the lemon juice, zest, toasted pine nuts and kale. Toss, while mixing in salt and pepper. Scoop onto and plate, sprinkle sesame seeds atop and drizzle with olive oil. DELISH!
