Buddha Salmon Bowl

This little bowl will give you all of the energy when you need it most!

  • 1 Salmon fillet

  • 1 small head of romanesco, cut into small flowerets

  • 3 cloves garlic

  • 2 cups tomatoes, halved

  • 1/2 lemon

  • 1 handful of fresh farmer’s market lettuce of your choice

  • 1 bunch of scallions, chopped diagonally

  • salt and pepper to taste

  • 1 teaspoon of black and white sesame seeds

  • about 4 tablespoons of olive oil, divided

Heat the oven to 350 degrees. Drizzle olive oil on both sizes of the fillet with salt and pepper, place aside. Place romanesco flowerets on one half of a baking pain and tomatoes and garlic on the other. Drizzle with olive oil and pinch or two of sea salt, place in oven for about 15 minutes. After about 15 minutes, place salmon in the oven. Roast for another 20-25 minutes or until salmon is cooked through. Once your veggies and fish is done, gently break salmon apart. Place the lettuce in the bowl first, with your romanesco, tomatoes and fish atop. Sprinkle with some black and white sesame seeds and enjoy!
